Coconut Curry Lentil Soup

When the weather gets cooler it’s only natural to reach for foods that warm our bodies and soothe our souls.

Lentils are the perfect fall and winter food — not only are they yummy but that are packed with protein and are easily seasoned with warming spices like ginger, cumin, and coriander.

One of my favorite fall soups is this Coconut Curry Lentil Soup. Honestly, I eat this all year round but it definitely hits the spot on cold days. This recipe is perfect for vegans.


  • 1 tbsp olive oil (or coconut oil)
  • 1 large yellow onion, chopped
  • 2 cloves garlic, minced (or minced garlic in the jar)
  • 1 tbsp fresh ginger, minced (or ginger paste to taste)
  • 2 tbsp tomato paste
  • 2-3 tbsp curry powder
  • ½ tsp hot red pepper flakes
  • 4 cups vegetable broth (or chicken broth)
  • 1 400ml can coconut milk
  • 1 400g can diced tomatoes
  • 1.5 cups dry red lentils
  • salt and pepper, to taste
  • 2-3 handfuls of chopped kale or spinach (optional)
  • Garnish: chopped cilantro


  1. In a stockpot, heat the coconut oil over medium heat and stir-fry the onion, garlic and ginger until the onion is translucent, a couple minutes.
  2. Add the tomato paste, curry powder, and red pepper flakes and cook for another minute.
  3. Add the vegetable broth, coconut milk, diced tomatoes and lentils. Cover and bring to a boil, then simmer on low heat for 20-30 minutes, until the lentils are very tender. Season with salt and pepper.
  4. Before serving, stir in the kale/spinach and garnish with cilantro.

Spring Detox for Weightloss

The changes that the female body goes through as it ages is really deep!  I know that I am relatively young, but I can see how my body has changed over the years, especially once I hit the 25  year mark.  I used to be able to maintain my weight with relatively little exercise but over the past few years, it has proven harder and harder for me to do so.  I have finally resigned myself to the fact that, though I have a healthy diet, I have to be more selective about what I eat and I need to exercise daily.

Now that we’re in a new calendar month, I have decided to become more serious and intentional about making healthy choices in order to maintain physical, emotional, spiritual, and mental health.

I am currently doing a detox for at least a week that will involved drinking water and fresh fruit and vegetable juices during the day while enjoying a big tasty green salad in the evening.  I have done a similar detox before and my body has always sighed and thanked me, so I am looking forward to similar results this time…and I lost so much weight when I did this.  I am not sure how much weight I want to lose (at least 30 pounds) but I do know that I need to make some positive changes in my diet and exercise, and this detox seems like the best first step.

  2. allow for cleansing and detoxification of the body
  3. create a break in eating patterns, while shining a spotlight on them
  4. promote greater mental clarity
  5. cleanse and heal “stuck” emotional patterns
  6. lead to a feeling of physical lightness, increasing energy level
  7. promote an inner stillness, enhancing spiritual connection
